The chefs join Lisbon’s Pedro Pena Bastos on July 5 for the fourth event of the series that celebrates the best seasonal Portuguese produce.
Algarve chefs João Oliveira (Vista*) and Louis Anjos (Al Sud*) are invited by Marlène Vieira, a reputed Lisbon chef, to join her to close the first edition of her Estação (Season) dinners, which brings together several renowned chefs by the Michelin guide in Portugal. On July 5, the two southern chefs will join Lisbon’s Pedro Pena Bastos (Cura*) to celebrate the summer season, highlighting the season’s best produce.
Invited by Marlene Vieira to share the open kitchen of her gastronomic restaurant, the chefs get together for an evening of homage and appreciation of excellent national products inspired by the Portuguese essence, presenting an exclusive menu that celebrates seasonality.
With the arrival of high temperatures and the new ingredients that summer represents, the three guest chefs will celebrate the proximity to the sea with menus focused on fish and seafood.
Estação’s fourth event will feature a tasting menu of 10 moments dedicated to the best of the extensive and rich Portuguese coast. The guest chefs will each be in charge of creating a starter and a dish.
Directly from the Algarve, Louis Anjos will use oysters from the Ria de Alvor, cuttlefish and the traditional alcagoita (peanut), and João Oliveira will make the iconic horse mackerel, anchovy, squid and the delicate violet prawn shine.
Lisbon-based chef Pedro Pena Bastos will combine mackerel, lobster, tomato, apricot and pine nuts, with chef Marlene celebrating emblematic seasonal ingredients such as cherry, pea, courgette flower and green asparagus.
“I am delighted to have three of my most admired colleagues join me for this summer dinner. Chefs who, like me, share this passion and dedication to quality seasonal – and national – produce.
This event brings us to the end of the first edition of the Estação dinners, which featured big names from the national gastronomic scene. We promise to launch the second edition in the autumn, now with renowned international guests, known for their work and appreciation of local ingredients, as well as respect for seasonality, on nights that will highlight the best of Portugal and our flavours”, says Marlène Vieira.
Sommelier Gabriela Marques is responsible for the wine pairing, with the support of two illustrious winemakersfrom the Bairrada region: Luís and Maria João Pato, father and daughter. Together they will share the story of their wines and the Pato family, which has been involved in the wine business in the region for several centuries.
Luis Pato brings the essence of the Bairrada with four references: starting with his sparkling wine, Espumante Vinha Pan 2015, then Luís Pato Quinta do Ribeirinho Sercialinho 2021 and Luís Pato Vinha das Valadas Pé Franco 2018, and for the more greedy part of the menu, M Sercialinho, an exceptional wine made in partnership with Mugaritz, considered one of the best restaurants in the world.
Maria João Pato, also based in the Bairrada, and known for her more disruptive approach to winemaking, presents Ducking Pet Nat, Blablabla 2021 and Quacquaaaaaac 2022.
This fourth event starts between 19:00 and 20:30, costs 200€ per person, and includes wine pairing. Reservations can be made through the usual channels (website, email – marlene@marlene.pt or telephone – +351 912 626 761).
