Folar Easter cake is king in São Marcos da Serra

Event pays tribute to traditional Easter cake

São Marcos da Serra will host the 26th edition of its ‘Feira do Folar’ between March 29 and 31, an event that pays tribute to the traditional Folar Easter cake.

The fair is held every year and “celebrates the Folar in its different shapes and flavours”, bringing together several bakers who each bring their take on the traditional cake. There are also exhibitors selling other regional treats, from liqueurs like the Algarve’s famous Medronho to sweets.

As the municipal council of Silves points out, São Marcos da Serra is a parish known for its “bread and Folar. By hosting the event, the goal is to showcase the village’s traditions, gastronomy, handicraft and know-how.

Aside from trying or buying a wide range of Folar cakes, visitors will also be able to enjoy concerts, religious celebrations, choir performances and a variety of street entertainment.

The fair will open every day at 11am and run until 9pm on the first two days and 8pm on Easter Sunday. Admission is free.

What is a Folar?

The most common version of Folar is a doughy and sweet type of bread, often cooked with an egg in the middle to symbolise the resurrection of Jesus Christ.

There are also different takes on the original depending on the region, with the Algarve’s best known being the Folar de Olhão. Covered in a sugary glaze, this version features several layers of caramelised sugar and cinnammon, making it deliciously gooey inside.
