Pork to take the strain

This is one of those “if” stories.  If bird flu does take hold and if we are advised to stop eating poultry, or if we just chicken out (no apology for the pun) and choose not to eat poultry, then those in the know tell us that pork will take over. This has to be good news for all those who know that they are able to purchase good quality pork (such as we see so much of in Portugal).  Advertising now states that pork is only four per cent fat and should, therefore, be viewed as good meat to eat.  Watch out for exceptional offers in the larger supermarkets; I recently purchased a lovely joint of pork with 50 per cent of the label price. But for those chicken aficionados among you, I suggest that a few packets of peito de frango put in the freezer, as well as some thighs and legs, in the freezer will serve you well – whether or not bird flu arrives – especially with BBQ time here!
