A new fine dining restaurant has opened its doors in the Algarve, just steps from Praia de São Rafael in Albufeira.
‘Sombra’, located within the newly launched Kimpton Atlântico Algarve, is described as a “sensorial ode to the link between the sea and the mountains.”
Led by Chef David Luísa, the restaurant showcases seasonal, locally sourced ingredients through two tasting menus: the Sombra Menu (€75) and the Vegetarian Sombra Menu (€65). Each includes seven courses designed to reflect the rhythms of nature and the culinary heritage of the region.
The standard Sombra tasting menu (costing €75) features dishes such as Dourada (gilthead bream with almonds, fig leaf oil, and garum); Cenoura (roasted carrots, orange sauce, puffed buckwheat, dried walnut cheese, dill oil); Pão (Portuguese sourdough, cumin flatbread, house-made butter, pickled enoki mushrooms, smoked trout rillette); Pregado (grilled turbot with caldeirada velouté and broccolini); Vitela (Azores veal ribeye with oyster mushrooms, yam-peanut ganache); and desserts including Laranja (orange pavlova) and Cacau (chocolate-rosemary brownie with olive oil mousse and salted caramel ice cream).
Meanwhile, the vegetarian menu (costing €65) offers alternatives such as Pepino (sweet cucumber with melon, tomato, and mint); Tomate (tomato dashi paella rice with garden herbs) and Piri-Piri (piri-piri oyster mushrooms with yam and peanut ganache).
“To create both menus we listened to the wisdom of the seasons, letting the rhythms of nature inspire our creations,” chef David Luísa says. “Each dish tells a story and pays tribute to local gastronomic traditions. We want to invite clients to feel the heartbeat of the land and her the ocean’s whispers with every meal.”
Designed by Nini Andrade Silva, the restaurant’s interior features “natural textures and warm tones, combining stone, linen, wood, and handmade ceramics” to create a calming, elegant setting. The décor mirrors the restaurant’s philosophy of harmony with nature.
Sombra is open Tuesday to Saturday, from 7pm to 11pm., with two seating times: 7pm and 8pm. Reservations are available online at ServMeco or by phone at +351 289 599 420.
