Guilty by Olivier combines panoramic views over Praia dos Salgados with a bold menu featuring pastas, pizzas, hamburgers and creative cocktails
The Guilty by Olivier restaurant officially opens on Thursday (July 17) at the rooftop of the newly launched The Westin Salgados Beach Resort in Albufeira, marking the return of the casual dining concept by the Olivier Group to the Algarve.

Located at one of Marriott’s newest resorts in Portugal, the restaurant combines panoramic views over Praia dos Salgados with a bold menu featuring everything from pasta and pizzas to hamburgers and creative cocktails.
The restaurant’s reopening follows a successful 2024 season and maintains its informal atmosphere. The menu includes signature items such as the “Rolinhos Guilty” (€12), made with pizza dough, cheeses, prosciutto, and black truffle paste, alongside dishes like Guilty Mac & Cheese (€19), a Veggie Burger (€20), and Chicken Calzone (€19). Lighter options include the Tropical Salad and Chèvre Chaud Salad (both €20). Desserts feature a Nutella Pizza (€14) and Churros with Chocolate or Dulce de Leche (€9).
The space, now integrated into a Marriott International property under the Westin brand, aims to deliver a blend of modern design, wellness, and high-quality dining, the Olivier Group says in a statement.
