The new Asian fine-dining restaurant at the Algarve Marriott Salgados Resort takes us on a culinary journey through Japan, China, Korea, and Portugal.
KAN.JO, an Asian-inspired fine-dining restaurant, has just opened in Albufeira. Located at the Algarve Marriott Salgados Resort, KAN.JO offers a gastronomic journey with irreverent flavours, elaborate techniques, and a contemporary atmosphere that invites you to awaken your five senses.
Based on the Japanese concept of emotion, each dish at KAN.JO is conceived as a work of art, a creative expression on a “blank canvas” of fresh ingredients, where the fusion between the Orient and Portugal is the main protagonist.
At the heart of the experience is the Sushi Bar, which invites you to interact with the chef and watch the artisanal preparation of each piece in a cosy atmosphere where every detail has been carefully considered.
This culinary journey through Japan, China, Korea, and Portugal is reflected in a selection of hot and cold starters, including scallop sashimi with umeboshi (€20), tuna tartare with umeshiso and salmon roe (€18), and shrimp spring roll with ponzu (€18). The chef’s signature dishes and hot options include veal “bitoque” teppanyaki with fried egg and tonkatsu sauce (€30), sea bass with dashi beurre blanc (€32), or 48-hour braised short ribs with fried onions and hoisin sauce (€34), among other choices that invite you to explore bold and creative combinations.

Situated at the Algarve Marriott Salgados Resort in Herdade dos Salgados, the KAN.JO restaurant is open from Tuesday to Saturday, from 19h00 until midnight.
