Ocean reopens with “Essência”, a homecoming for Chef Hans Neuner

After five years exploring Portugal’s culinary world, Hans Neuner returns home with a new menu

The two Michelin-starred Ocean restaurant, at Vila Vita Parc, in Porches, reopens today with Essência, a new tasting menu by Chef Hans Neuner that marks both a conclusion and a new beginning.

After five years exploring the culinary routes that shaped Portugal’s global identity, Neuner returns to where it all began — home.

Since 2021, Ocean’s annual menus have followed the paths of explorers, merchants and cultural exchanges that connected Portugal to Africa, Asia and the Americas. From the Azores to Brazil, from Mozambique to Macau, and as far as Hawaii and Japan, each chapter celebrated the flavours and techniques born from centuries of maritime discovery.

With Essência, that circle closes. The new menu is a distillation of everything gathered along the way — a refined, deeply personal expression of Portugal’s culinary soul. Of the approximately 15 courses, the majority draw directly from the Portuguese larder and its most beloved traditions, revisited with two decades of technical evolution and five years of global perspective.

“The circle is closing,” says Hans Neuner. “We travelled far and wide, but the greatest luxury is understanding your home more deeply. Now we return to Portugal with everything we have learned.”

A menu written in Portuguese

In Neuner’s hands, iconic dishes are transformed without losing their identity. A Francesinha from Porto becomes an elegant composition of Carabinero prawn, delicate chouriço and truffle.

The Algarve’s Frango Piri-Piri is refined yet remains true to its bold character. Moreia from the Sagres coast is crisped in homage to Bairrada’s suckling pig tradition, bridging regions in a single bite. A revisited sole with lima beans and pata negra reflects the evolution of a dish first created fifteen years ago.

Even a subtle reference to the chef’s Austrian roots appears in the opening sequence: a single bite of Tafelspitz consommé — the first time in nearly two decades that Neuner places a memory from his childhood on the Ocean menu.

The result is not a retrospective, but a culmination — a menu written in Portuguese, shaped by travel, and defined by clarity, balance and restraint.
